Let's start by preheating the oven to 375 degrees Fahrenheit. Wash your hands with soap and water before continuing. Pat the chicken breast dry with some paper towels, then salt and pepper both sides. If you haven't already, chop up the prosciutto into a small dice (think roughly pea-sized). Get out a baking dish large enough for your chicken breast. Use cooking spray or olive oil in whatever amount is appropriate for your pan size (for example, if using an 8 x 12-inch baking dish you can use about 2 tablespoons of oil). Spread out half of the pesto over the one side of the chicken and sprinkle on half of the prosciutto bits. Place the other side on top so that it looks like a sandwich with pesto and prosciutto inside. Spread out any remaining pesto on top—if there's any leftover prosciutto, put it around wherever there's extra space in your baking dish. Sprinkle parmesan cheese evenly over everything and bake at 375 degrees Fahrenheit for 25 minutes or until done (there should be no pink left in the middle when you cut into it). Enjoy!
Tuscan chicken
This one's a little different from the rest, but it will be sure to please.
While you're getting ready to make this recipe, get your chicken breast cooking in some olive oil at medium-high heat. We're going to cook it for a while before we start adding other ingredients, so let's get that started now.
Once the chicken is almost ready (cooking time will depend on how big the pieces of chicken are), add two cans of diced tomatoes and two sprigs of basil leaves. Cover the pan and let the sauce cook for about 10 minutes at a simmer (the mixture will bubble slowly). Then add 4 ounces of cream cheese, 1/3 cup grated Parmesan cheese, 5 cloves garlic (minced), and salt & pepper to taste. Let this continue cooking for about 10 more minutes until everything is cooked through. Then it's done!
Serve over pasta or rice with some crusty bread on the side.
